Low Country Boil
-This was my first attempt at the Southern classic, and I must say I was surprised at how easy it was. I did learn that it requires a gigantic pot to cook in, and I ended up using two pots to get everything cooked, and then draining out most of the liquid and combining the goodies into one. It's splashy and messy, but worth it! This recipe serves about 15.
4 pounds large shrimp, peeled
2 to 3 pounds hot sausage (I used andouille, and it gave the whole thing an extra spicy kick)
4 pounds whole crab broken into pieces (I skipped this, but I think it would be good)
6 to 8 ears of corn, shucked and halved
4 pounds red potato's,
1 3-ounce bag of crab boil seasoning
2-4 TBS Old Bay seasoning
5 quarts water
-Add potato's, seasonings, and water to a large pot. Cover and bring to a roaring boil for 5 minutes. Add sausage, crab, and corn, and continue to boil for 10 minutes. Add shrimp towards the end, and only boil for a couple minutes. Drain out water and serve while it's hot! Enjoy!
