And we're back!

After a much longer than expected hiatus I re-greet you from the tundra's of Gainesville which has decided to take a turn for the frigid. Fortunately I have a classic recipe sure to warm you up even after the thermostat has taken a nose dive.

Classic Chicken Noodle Soup:

-I usually make this with whatever leftover veggies or grain I happen to have on hand, but tonight (following a case of the sniffles) I will be making it the following way:

2 1/2 C diced chicken

1 c diced carrots

1 c diced celery

1 bunch parsley

1/2 large white onion

1 clove crushed garlic

1 c no-yolk noodles

32 oz. chicken broth (or stock if preferred)

Tony Chachere's seasoning

-Saute garlic and onion in olive oil. Add chicken and brown. Add celery and carrots, saute for 5 minutes. Add saucepan ingredients to large pot. Add chicken broth and seasoning. Bring to a boil, then set to simmer. Add in parsley and no-yolk noodles. Simmer for 20 minutes. After cooking you may want to add in an extra cup of water depending on how much the cooking process intensified the flavor of the broth and seasoning. The best thing about this is that it is completely up to the cook, everything is changeable! Chicken soup will always cure what ails you :) Enjoy!
